Meditation today and Thanksgiving Yesterday

“Things would go well for us if we would think positively about everything.”
–Mary Hayes, CLAOQUOT
Each of our thoughts are like individual seeds. These thoughts will plant our life garden. Whatever our thoughts, they grow in our gardens. Each day we will process about 50,000 thoughts or thought seeds. Positive thoughts will produce positive results. Have you ever been aware of what you are thinking about during the day? Of the possible 50,000 thoughts in one day-if the positive thoughts were flowers and the negative thoughts were weeds-how would your garden look at the end of the day?

Great Spirit, let me plant positive seeds. source Thanksgiving, aka the native Day of Mourning, went well yesterday. I was hosting the dinner at my house, as well you know. Here is what I ended up making/providing by the time dinner got started:

  • Turkey *full 11lb and breast 6lb*
  • Cranberry sauce
  • Deviled eggs
  • Pepsi and Cranberry splash Sierra Mist
  • Homemade Mashed Potatoes *10lbs*
  • Homemade Gravy
  • Corn *4 cans*
  • Ambrosia

Now, if you will remember, I only said I was doing one turkey, the potatoes, corn, and gravy. See what happens when I get overzealous? HAHA. I enjoyed every moment of making the food. I got into my culinary zone and went to work!

Eleven pounder 2My birds came out gorgeous, done to perfection. For the full turkey, I brined it with brown sugar, salt, garlic, and italian seasoning. The next day, I stuffed it with onion and 4 colors of peppers. It laid on a bed of those same peppers, onions, and celery. I also placed garlic under the skin in strategic places so that the bird would be bathed in full garlicy glory. The meat came out so juicy it was melting in our mouths.

The brine for the turkey breast was a bit of salt, brown sugar,6 pound turkey breast pineapple juice, apricot juice, and cherry juice. The next day, I put it on a bed of sliced apples, pineapples, and apricots…putting some fruit on top for glaze factor. It didn’t come out as moist as I would have liked, but it wasn’t dry to the bone and my son ate a huge bowl full of that turkey.

The ambrosia little Taz and I made was not traditional in that it had no cream cheese. It was made from the left over fruit from the turkey breast and extra creamy cool whip. We had a blast making this the night before the festitivities. He also helped me season the corn on the stove so I could just heat it up in the morning.

In the midst of my fervor yesterday, my son made a turkey all by himself:

My sister in law arrived with her children at ten of 4. I was surprised. They brought the sweet potatoes, utensils, and a long table. My other in laws didn’t arrive until around 6, bringing with them the pies, mac n cheese, pork shoulder *pernil*, more sodas and juices, and stuffing.

Dinner finally began and people were pawing at my turkey! They couldn’t get enough. My mashed potatoes and deviled eggs were a big hit, too. Everyone complimented my food *and they don’t lie about food if they don’t like it* and kept complimenting me. They were more astonished than anything because in the 5 years they have known me, I have never made more than pancakes or pasta for them all. My father in law was gushing. Everyone had at least 2 plates of food.

Later, after everyone left, my other friend and his son from next door came over to chill for a while. Mike had some pina colada made special from Husby, and his son had some corn.

Then, I cleaned up some stuff and my son went to sleep without problem.Still knocked out

The house ended up only being slightly dirty. I barely had dishes left to do and fun was had by all. Now my fridge is full and my shoulders are no longer heavy.

As I was settling in for my own rest, my husband hugged and kissed me and told me that I did a good job. That was all I needed to hear.
