




Many people don’t think about South Jersey as the kind of place that true Southerners reside. You have to really be there to understand. My family has fish fries every now and again. We know that grits go with salt, butter, and a side of scrambled eggs with some fried scrapple. We can fry okra with the best of them. Gravy is a necessity on our table and chicken is always in abundance. We know where the best rib shack can be found and how to make ho-cakes and fry cornbread. Homemade jelly is a breeze for us.
Don’t get us wrong. We are just as Southern Fried as many others. My father is from Virginia. My aunt used to live there. My mother and grandmother have always been South Jersians, though…as have I. I don’t really know we got so much Southern Charm.
My folks might just surprise y’all. I have been shucking corn and snapping beans since I was strong enough to handle a husk. Bacon drippings are a great spice to many dishes…rice, beans, cabbage *if it isn’t already in with the ham bone”, and so much more. It’s a wonder I didn’t grow up a little more southward.
Well, y’all come back naw ya’hear? I’m fitin’a go’n down yon’a and rustle me up some grub. *didn’t think you could actually spell those words, did you ? LOL*
