No one noticed but the other person who was there that I did not mention a thing about Tuesday in Puerto Rico. Why didn’t I? Because it was awesome enough to have its own special post. I will do it now so that person doesn’t feel like I forgot her … I was going to save it for tomorrow.

I just got finished chatting with my friend who I have called Princess Juicy here before *because she loves Juicy Couture*… She is in San Francisco awaiting her flight to Hawaii!! I am so happy for her. She gets to go visit her friends and family for a whole month. I didn’t get a chance to ask about her accommodations, you know, whether she will be staying with family or if she got a Hawaiian beach rental.

Out of sheer curiosity, I thought I would check out the prices. I found several hilo vacation rentals, and one was actually in my price range. I would be able to bring a few friends and be quite comfortable in a condo that sleeps 8. I think I have been bitten by the tropical vacation bug. I ache to see more palm trees that I can reach out and touch.

I have to wonder, though, what all this tourism does to the environments and ecosystems of the area. You would think that the earth would be having a fit with all the people who are traveling…molesting the beaches, reefs, and wildlife. I hope that somehow there is a way that we can all see the beauty of God’s creation and still keep it just as untainted.

So here is to Princess Juicy. May you have a great visit and return to us soon! Take lots of pictures!!

Puerto Rico has some bread that I would kill to learn how to make. It is called Pan de Agua and there is a variation that is called Pan Dulce. Both breads melt in your mouth. There is a form of bread that is close to it in the US, but it’s not exactly what you would call the same.

Thinking about bread has made me look into Bread Pudding recipes and this one looks so appetizing. I can even argue that it is low fat. My mom makes a killer bread pudding, too. I wonder if she would make me some if I promise to go to her house for Memorial Day.

Friday was our last full day in Puerto Rico. Needless to say, I was nearly heartbroken. I have come to love PR like a native of the island. We decided to take the Kid to the grand opening of the Speed and Splash Water Park.. but first we had some business to attend to:
