These are only the beginning preparations for tomorrow’s big feast. I am excited to once again host TDay dinner, even if I hate the premise. I am going to try to use TDay as a day to be thankful for what God has granted me. I will also give hommage to those who have come before me, who have fought and sacrificed in the past. The people, MY people, who gave their lives to try and protect our native lands.

Right now I am making a list of the things I need to prep for tomorrow.
Our menu consists of:

  • My special garlic turkey
  • My mother’s smoked turkey
  • Mashed potatoes (from scratch)
  • Gravy (from scratch)
  • Stove top stuffing (hubby’s favorite)
  • Chocolate Mousse
  • Yogurt Cake
  • Rice and Beans (espanol style)
  • Cornbread
  • Cranberry Sauce
  • Deviled Eggs
  • Corn

I think that’s it. We will see what mom brings. I know she is bringing her awesome sweet potato pie. I already bought the Cool Whip. That reminds me, I have to take them out of the freezer so they are nice and thawed before tomorrow. My turkey only just went into the fridge yesterday and is already almost completely thawed out. All together we will have about 26 pounds of turkey. No pork this year. I don’t really like ham that much, and no one really misses it after all the other food.

Right now I have prep work. Cutting, peeling, mixing, and whatnot getting ready to just throw those things together tomorrow.

I love cooking big meals like this (once in a while). It gives me a freedom to use the cooking rythym God granted me. The kid likes to help me, too. I might make him some jello so he has something to look forward to that has no milk in it for dessert tomorrow.

I made corn fritters this morning for breakfast. I thought that they would be a hit, considering that my hush puppies were lapped up so quickly when I made them. Who could have guessed that corn pancakes and donut-like muffins with corn would garner such a different reaction?

My husband found that the pancakes were “nasty” and therefore promptly pushed them aside. I enjoy them thoroughly, so it was like “more for me!”.

Honestly, though, he hurt my self-esteem. He doesn’t get that when he says my food is nasty there is an equation that goes something like this:

Food quality + reaction = % of my self worth

Sure, it shouldn’t be that way … but it is. His reaction made this happen to me:

nasty = me

See how that happened? I hate math, but these are equations of the heart. His reaction to my food quality added up to Nasty. Nasty is equal to Me.

There you have it. A mathematical analysis of why I got so PO’d this morning that I threw his food into the kitchen.

1. How do you like your eggs cooked? Any special ingredients?
In an omelet. Ideally with tomatoes, mushrooms, cheddar cheese, and mozzarella cheese.

2. What’s your favorite cold sandwich, made on two pieces of bread?
Simply turkey and cheese.

3. What is your favorite pie?
Sweet potato.

4. Name one food you refuse to eat and why.
Octopus. EW It sticks to your tongue. Squid does too. GROOOOSSSSS.

5. What’s the name of your favorite restaurant, and is it small or part of a chain?
The Maplewood. I have only been there once, but it was PHENOMENAL. It is part of a small chain.

The man is working mostly days now, which means we use more food than normal. I have to make sure I know what I want to make for dinner. Today, I am at a bit of an impass. I know what we have here but what will I make? I hate it more when we still need to go shopping. We already went shopping, so at least I have ingredients this time. Just don’t know. I hope he does, so when he gets here he just puts in his order and I can go whip it up. I think I would make a great short order cook if I decided to ever do such a thing. Just tell me what you want, I will make it great!

that is sung to the tune of “I Enjoy Being A Girl”. UGH and UGH. I feel like I have been dragged by my ankles through the rain down a trash filled alley. I wish I could retire for the day but I cannot. Now I have to cook dinner! *grumble grumble* AND WHY does my son, who has been mostly good acting all day, decide to wait till his father gets here to NOT listen to me? OMG It’s like he is trying to show me as a weak mother. I hate this *pout*

Guess what I made for dinner!

White rice, chicken strips, and corn on the cob. It was so good and filling. I love to cook things like that. It was healthy and delicious. My only problem is the location of our exhaust fan. It barely takes anything out of the house. I wish so many times that we had one of those nice range hoods so I didn’t have to fill the house with the smell of grease or burning food. I miss that about cooking at my mother’s house.

I understand that he is a growing boy, but 3 sandwiches, a full ramen packet, 2 pieces of toast, 2 bananas, an apple, and lots of juice / milk in the middle and this kid is STILL asking for food! He is FOUR and it isn’t even DINNER time yet!!! I keep giving him water and milk to drink so that he doesn’t eat too much. I am also refusing to give him food one thing after another. He keeps asking and asking. It’s insanity! I don’t want him to be obese. Right now he could eat 3 eggs and some more bread and still be saying he is hungry. You would think he is the one that’s pregnant LOL

OH It’s my favorite time of the year:

Strawberry season. MMMM My mother always makes homemade jams. We used to visit the fields every year and pick our own strawberries. I love them alone, with sugar, with chocolate syrup, with jello, with cool whip… SO good. I was looking at a picture of a great way to eat strawberries on www.baychef.com.

The sugar cookie with blueberries and cream looks divine. My mouth is watering. I am going to attempt to make my version of shortcake probably tomorrow so we can have it for dessert tomorrow night. Talk about good.
